Pan de Elote is one of the most popular online searches in Latin America. Google recently revealed the most popular search terms for 2022 and the results were very interesting but not entirely surprising. Soccer, for example, was one of the most popular searches. Topics such as “Where to watch the World Cup?”, “Who is playing in the World Cup today?” and “Who is playing in the World Cup tomorrow?” were popular and reflect soccer’s popularity as a sport in Latin America. Food searches, however, indicate Latin America’s more diverse tastes — dishes such as “pasta Alfredo” ranked high. Traditional recipes for foods like Pan de Elote and Birria were also popular. Pan de elote or Mexican corn cake recipes were highly sought after — and its reflected across popular websites. Unlike regular cornbread, pan de elote recipes include corn kernels and sweetened condensed milk. It’s truly more of a cake than a bread as its name might suggest. But if corn cake is what you’re craving, then “pastel de elote” is the recipe for the cake version. Pastel de elote resembles pound cake in appearance but tastes quite different. Similar to its cousin, pan de elote, pastel de elote recipes include corn kernels but also add brown sugar, vanilla and half and half. To make it even more indulgent, pastel de elote may be topped with caramel, ice cream, a variety of fresh fruits, mint and powdered sugar. Truly a decadent dessert!
