Lime & Cilantro Summer Lobster Tacos

Try this delicious recipe. Summer is here and it’s hot.  Here’s a suggestion– eat cool.  Eating cool isn’t limited to just cold salads, soups and drinks. Cool food comes in many varieties and doesn’t have to be boring or tasteless.  Like any good recipe, good cool food begins with great fresh ingredients. Cilantro is typically served with tacos, but if you hate cilantro, try parsley.  You want to buy organic and you want it to be super fresh. Make sure not to crush your herbs in a crowded grocery bag and try placing the stems in a glass of fresh water when you get them home.  You can trim the stems to help them absorb more water, just like when you clip rose stems before placing them into a vase. Always use fresh, pure and clean water and remember to change the water frequently. Fresh herbs truly enhance cool dishes; they add that extra something, the flavor burst and crispness that really kicks the dish up a level.  I like to keep my recipes quick and simple (always). The way I see it, a great recipe shouldn’t take too much longer than going to a restaurant and sitting down for a meal but it should cost a lot less & save you money. That’s why I love making lobster tacos. Lobster anything tends to be very expensive at most restaurants. Begin by purchasing frozen lobster tails at a bulk discount store like Costco. Keep them in the freezer until ready to use them.  Prepare the meat as per the instructions and once it’s fully cooked you can coat the lobster in butter and add a little salt or chili powder seasoning (if you want). Place the seasoned cooled lobster meat (minus the shell) into the fridge for an hour until it’s nice and chilled. Place the fresh herbs and lime slices into the fridge at the same time along with the tomatoes. You want the dish to be super cool and crisp without any warm sections. Make sure that the meat and herbs are dry, juices will create a soggy taco.  You can also scatter some cooked and cooled fat-free black beans (minus the wet sauce) for added protein and to reduce the calories.  The ingredients can be stored in your refrigerator and quickly assembled when it’s time to eat.

 

Cilantro Lime Lobster Tacos Ingredients :

  1. Chilled cooked seasoned lobster meat
  2. Fresh cilantro or parsley
  3. Fresh small tomatoes
  4. Fresh lime slices
  5. Black beans (optional)
  6. Chili powder and/or crushed red pepper flakes
  7. Fresh corn tortillas
  8. Guacamole or fresh avocado slices
  9. Salsa
  10. Optional – sour cream, pineapple, salt & pepper, and jalapenos

The Perfect Summer Dish – Cool & Delicious Lobster Tacos-

For the salsa, you can go with a high quality store-bought salsa (Real Simple has a good list and may be found here). Or, you can make a simple Pico De Gallo topping by combining chopped onions and jalapeno peppers with the tomatoes and cilantro. You can do the same thing with the guacamole and make it yourself with fresh ingredients. The choice to use store-bought versus making it yourself is a personal one.  When fresh ingredients are in season (taste better and usually cost less), it’s probably better to make it yourself.  Salt & pepper can be added or not.  It’s always a good idea to taste the taco as you go along and season it to suit your tastes. It really depends on what you like.
