Mole!

It’s winter and mole can certainly warm you up. One of my personal favorites is the prepared mole from Mayordomo from Oaxaca Mexico. Mole comes in several varieties, the most common are yellow (amarillo), black (negro) and red (rojo). Oaxaca Mexico is called the land of seven moles –colorado, verde, coloradito, and mancha manteles are the other four types. Mole is found throughout Mexico and is unique to each particular region. For example, a mole from Puebla may taste quite different from one from Oaxaca. The classic mole is mole poblano. Mole is a combination of chili peppers, chocolate, tomatoes or tomatillos, spices, and seeds. In fact the average mole has up to twenty ingredients (many have fare more) and the process of creating a good mole sauce can be quite time-consuming. For those of us who simply wish to experience mole, commercially available jars of mole are available.
