
In the latest list of new and innovative AI applications in the field of Artificial Intelligence, a sensor linked to an artificial neural network can accurately analyze both solid foods and liquids. Developed by a research team from Penn State1, the “AI tongue” can detect specific characteristics such as freshness, quality and authenticity. Referring to authenticity, one example cited (see Rubin Hassid’s You Tube video embedded below) was AI’s ability to distinguish between Coke vs Pepsi. Results were published in Nature magazine in October; the article is entitled “Robust chemical analysis with graphene chemosensors2.” According to the authors, “the AI could accurately detect samples — including watered-down milks, different types of sodas, blends of coffee and multiple fruit juices at several levels of freshness — and report on their content with greater than 80% accuracy in about a minute.” Not only was AI faster, it could also detect changes over time. Researchers revealed ““We found that the network looked at more subtle characteristics in the data — things we, as humans, struggle to define properly,” Das said. “And because the neural network considers the sensor characteristics holistically, it mitigates variations that might occur day-to-day.”

AI was up to 99% accurate in assessing fruit juice freshness and did so in under a minute. It was also able to tell the difference between different coffee blends. A single sensor can detect multiple chemicals, beyond those found in food and drinks, potentially identifying contaminants and pesticides. Multiple uses and potential applications are evident. The evolution of groundbreaking AI devices combined with training data could expand into other areas, such as medical diagnostics. An exciting development to be certain – some day we may find an AI device linked to our smart phones. Just imagine going to a restaurant and allowing your phone to try the food for you. Or tell you which drink or wine goes best with the meal. The rapid developments in artificial intelligence are nothing short of incredible.
