In February, Rayo celebrated its third anniversary by introducing a bold new menu. Rayo’s newest innovative menu was designed in collaboration with a local perfumer “Tamach” and is a tribute to Mexico’s sophisticated cultural heritage. Once again focusing on cocktails as both an experiential and sensory journey, it begins with a curated box featuring aromatic profiles from all ten of their signature cocktails.

Mexico City, Mexico – Mexico City’s Rayo Cocktail Bar is thrilled to celebrate its third anniversary in 2025. Housed within a stunning, multi-level heritage estate, Rayo is Roma Norte’s premiere rooftop bar….This milestone marks three years of pushing the boundaries of mixology while honoring the country’s rich cultural heritage.
To mark this occasion, Rayo is introducing a bold new menu. Titled “Hecho en México” or “Made in Mexico” the new menu is a tribute to the country’s deep-rooted cultural richness, weaving together ancient traditions and contemporary techniques. The menu is interactive, inviting guests on a sensory journey starting with a unique fragrance box developed in collaboration with a local perfumer “Tamach”. Featuring aromatic profiles of all ten signature cocktails on the menu, the box allows guests to choose their drink based purely on scent. An illustrated and written menu accompanies the box to further explain flavor profiles, ingredients, highlighting those made in Mexico, and more to ensure guests receive their perfect drink. This interactive experience adds an element of adventure and inclusivity, encouraging guests to explore drink options that are less familiar to their palette but guaranteed to delight.
The menu infuses inspiration from Mexico’s rich distilling traditions and history to Rayo’s cocktail menu, telling the stories behind Mexico’s distillates, and honoring the culture and history of the country that the bar represents.
There is a keen interest in local spirits such as agave-based spirits, Pox, Tuxca, and Charanda.
Cocktail highlights include the Puntas y Colas, a savory Margarita reimagined with Sotol, pickled carrot and hoja santa, and the Tequilana Pet Nat, a refreshing blend of Tequila, Mexican sake, and calpis infused with grapes, garnished with a delicate agave-shaped jelly. Also debuting is Muy Mamey, a tropical, tiki-inspired cocktail crafted with mamey, avocado, and cempasúchil flower, offering a new take on Mexico’s native ingredients.
